FORGET Italian salami and German bratwurst - a lover of fine foods from Sudbury is hoping to put the town on the map with the invention of a brand new sausage.

David Thompson, who has developed the product with local butcher Justin Clark, says the recipe for the “Sudbury Sausage” is a secret, although he can divulge that it contains pork, herbs and spices.

If it takes off, it could even rival the county’s famous Newmarket Sausage, the original recipe for which dates back to 1884.

The creation, which has already piqued the interest of a local museum, is on sale at Thompson’s Delicatessen, a new shop that he has just opened in Gainsborough Street.

Mr Thompson has approached Gainsborough’s House to see if he could gain permission to put an image of the artist’s bust on packaging that will be specially created to enhance the image of the Sudbury Sausage.

A spokesperson from the museum confirmed that they were in discussions with Mr Thompson about the proposal.

He has also trialled the product at Thompson’s Bistro next door to the deli, with some very encouraging results.

He said: “We have been serving Sudbury bangers and mash in the bistro and this has been going down extremely well, particularly in the cold weather. It’s a classic British dish with a local twist.”

He added: “I have been involved with the food industry since I was 16, working with chefs all over East Anglia and sourcing products from all over the world.

“I thought it would be a wonderful idea to bring a continental style deli to the people of Sudbury, while creating and selling products that put the town on the map.”

Mr Thompson, who is half Dutch, hopes his new venture – which sells everything from home-made jam created from local garden fruit, to exotic heart-shaped continental cheeses and locally baked pies – will add a touch of class to the town and will boost the number of speciality shops.

He said many people in the Sudbury still spoke fondly of EW King, the deli and speciality grocers’ shop that was run by the Kisby family for nearly 90 years before finally closing in 2006.

“It had that wonderful smell of freshly ground coffee and it was the kind of place you just wanted to stand in a soak it all up. Derek Kisby has given me a lot of guidance in setting up my shop so hopefully I can recreate a little of that experience.”

  • Best wishes for the Sudbury Sausage! I am a Suffolker who used to live in Acton but left over 20 years ago and lives in Carlisle - so the Sudbury Sausage is going to rival the Cumberland Sausage!!!
