Picture the scene. It’s Friday. You’ve had a long week at work. You’re tired. You’re a little bit broken. But you look down at the pile of mail at the front door, and amidst the bills, the leaflets and the charity bags you find a neat little parcel – filled with brownies.

That would make your day right?

So have you heard of Simply Cake Co? Celebrating a year in business, the postal brownie (and now tiffin) company is the brainchild of young Norfolk-based entrepreneur Susanna Lemon, who’s followed her dream to bake for a living.

A relatively recent uni graduate, the baker was taking part in a graduate scheme until early last year, and found she really wasn’t enjoying it. “I’d always thought about starting my own businesses and I’ve always been a keen baker and love going to food festivals, but I’d buy something that I’d think would be a nice cake and go away thinking ‘I could make that so much better’.”

And that set a spark firing in Susanna’s mind. Could she make something of her baking prowess? Her formative years were spent in the kitchen with her mum, making mostly biscuits (including what she says is amazing caramel shortbread).

And Susanna has wowed friends and colleagues with her brownies for many years. “When I was at uni I was always making them for people and I loved it. Every time I made them I’d change the recipe a bit to make it perfect and the best brownie recipe I could. After uni I did a placement year working in an office and when I took brownies in there people were always asking for the recipe – so I knew it had to be good.”

Only free-range eggs, proper butter and good Belgian chocolate make it into the treats, which are apparently almost half made with chocolate, giving them a gooey, chewy centre and crispy top. “They literally melt in your mouth,” Susanna smiles.

“It took ages to perfect the size of them so they fit perfectly in a package through the letterbox and so it doesn’t cost too much to post them.”

The brownies (in boxes of six or 12) slip nicely through the letterbox and come with a card which Susanna can complete with a message if you like. A box of six will set you back £14 with postage, or 12 is £25.

Original flavours include chocolate chip, chocolate orange, salted caramel, peanut butter and blondies, with Oreo and Biscoff brownies added recently. Seasonal specialities (think candy cane at Christmas) make regular appearances, and there’s a monthly special – currently marzipan “because my dad loves it,” Susanne says.

The baker takes them regularly to markets and events, including King’s Lynn farmers’ market where she says she can’t make enough of her moreish brownie ‘incredibles’. Just in case you’re wondering, an ‘incredible’ is a centre of caramel or soft cookie dough, surrounded by brownie and dipped in chocolate!

Tiffin is a relatively recent addition and is being officially launched at the Royal Norfolk Show in flavours from cornflake and rice krispie, to Oreo, mint chocolate, custard cream and Malteser. As with the brownies the tiffin is “all made with Belgian chocolate and real butter. I think it really really does make a difference.”
