TWINS Alex and Oliver Burnside are taking over the lease of the Plough and Sail at Snape Maltings from April 4.

They are local to the area, with Alex, who will be front of house manager, having just left the Regatta Restaurant in Aldeburgh after working there for eight years while Oliver, a chef, has previously worked at the Regatta and, more recently, at the Crown and Castle in Orford.

Alex said: ‘We have built up a sound reputation and therefore potential customer base, and we aim to build on this and establish a popular country dining pub with a reputation for great food, a welcoming and relaxed atmosphere and exceptional service.”

They brothers say the pub’s name inspired their philosophy of “celebrating quality produce from land and sea” and they aim to bring together local food from the field and the ocean to offer a contemporary fine dining menu in the evening and a more simple traditional menu at lunchtime.

Oliver said: ‘We plan to change the menu regularly to work within the ‘seasons’ of foods and have special dishes available that change daily. Once established, we will endeavour to host ‘theme’ evenings, such as a ‘Starters and Puddings’ night once a month for diners in the restaurant.”

“The pub/bar side of our business will be run in a traditional manner, offering customers a vast range of draught and bottled lagers and ales, spirits and soft drinks and bar snacks,” Alex added. “A comprehensive wine list will also be offered that will be economically accessible to all.”
