Peel and grate a large potato into a bowl.

Add about 6 oz of self-raising flour. To this add a good pinch of cayenne pepper, 1 teaspoon of salt, about 4 oz of mature cheddar cheese, 4-5 spring onions or one large onion (finely chopped), 1 teaspoon chopped thyme (or other herb of preference).

Mix all of these ingredients, then in a jug put 2 tablespoons of milk, a large teaspoon of mustard and 1 egg.

Beat these and pour gradually into flour mixture and bind together using a palette knife.

You will have a sticky dough but you can always add a bit more flour.

Plop dough mixture onto a baking tray that has been lightly oiled. Pat the dough into a roundish shape and dust with flour.

Bake in oven at Gas mark 6 for first 25 mins, then turn down to Gas mark 4 for remaining 20 minutes.

You can have this bread with any herb and have just with cheese or just with onion.
