Baldwin, who left Histon in November, will take a commercial role and is set to become a director.
In his 17 years at the village club, Baldwin helped guide them from the local Cambridgeshire leagues into the Blue Square Premier.
"I find Gareth to be a very enigmatic and positive personality and he's been a life-long fan of this club," said Cambridge chairman Paul Barry.
"We all know what he's done across the A14 and I'm a great admirer of his. I'm looking forward to working with him.”
