The midfielder joined Ipswich for £250,000 in December 2004 making 89 appearances and scoring nine goals. His contract was not renewed when it ended on June 30.
Luton boss Kevin Blackwell said: “Darren is an old head whose job will be to help the nurture our young lads through.
“We had a young squad who lacked experience in certain areas and at certain times in games last year and Darren will provide us with some extra strength in midfield.”
Meanwhile, Colchester United's Richard Garcia has completed a move to Hull City.
