A Suffolk bakery has expanded into a café in a move that the business owner has called a 'dream come true.'

Yasmin Whybrow, 29, was met by people queuing outside her new café before 9am on its opening day of last Friday.

"It was too busy, which is a great problem to have!" said Miss Whybrow, business owner of Sapphire's Café and Bakery.

"We didn't realise how popular we were going to be.

"I had to rope in some friends on Saturday to help us clear tables and wash up because we were rushed off of our feet."

The madness of the opening weekend meant that the café ran out of cheese and bacon during Friday's service and bread and sausage rolls by 1pm on Saturday. 

Miss Whybrow added: "We didn't have a moment to refill the cake fridge, either. 

"Everything is made fresh to order on the premises so it just takes a little longer - especially when you can't find something!"

The café and bakery business based at 4 Mill Street in Mildenhall began life in Miss Whybrow's kitchen. Sapphire's was originally a celebration cake business that she launched during one of the Covid lockdowns. 

The owner added: "I loved baking as a child and used to bake with my Nana.

"I always wanted to be a cake baker and so when the world was sent into lockdown and I had some free time I just thought to myself, 'what's the worst that could happen?'

"It still blows my mind that this has all happened to me."

Sapphire's moved into a professional kitchen in February 2021 and opened for takeaway to customers in the first week of April 2021. 

"I never thought it would get this big!" Miss Whybrow laughed.

Sapphire's Café and Bakery is a dog-friendly space and open Wednesday to Saturday, 9am to 5pm.
