A converted horsebox serving a range of crepes and bubble waffles is gracing the Suffolk market scene. 

Clare Stalker had been looking to do something a little different in addition to her nine-to-five and realised, through talking to her daughter, that food was her passion. 

"I can't ever just put food on a plate," she said. 

"The only thing that I am really passionate about is food.

"I have several years of pub and restaurant experience and this felt like a good fit."

Ms Stalker, who is originally from Yorkshire but moved to Suffolk in 2010, operates Bites & Delights out of a converted horsebox painted bright blue, hinting at the fun food that is served from the hatch.

"I have no idea why I bought a horsebox," Ms Stalked laughed. 

"It's quirky, it's different, and when I started looking I saw one that was set up to make waffles and pancakes and I thought that I could do something like that."

The business serves a range of bubble waffles and crepes with a variety of fillings, including Oreo, Biscoff, and 'unicorn,' which was described by Ms Stalker as "as many e-numbers as you can get in one place!"

Ms Stalker launched Bites & Delights at Sudbury Market on Saturday, November 11, and was pleased with the first day on the job.

"It went really well and was the perfect first week," she said.

"I learned a lot about what I need to do in the future, too.

"I have plans to make the business name more visible and add an A-board."

Ms Stalker also has plans to offer gluten-free and vegan options but wants to find her feet a little bit more before expanding her menu. 

"Once I am more settled then I will start to look at different options," she said. 

At the moment, while she is still working full-time, Bites & Delights will be a regular feature at Sudbury Market on a Saturday.

However, in the new year, Ms Stalker has plans to expand a little more. 

"I'm communicating with the Bury St Edmunds weekly market at the moment, and I am thinking about doing weddings and christenings," she said.

"I'm also toying with the idea of adding cheesecakes to the menu, or a future evening delivery service.

"I will talk to the customers and see what they want.

"I really want to add to what I do!"
