Artisan butchers Palfrey & Hall will be joining the many other independent businesses that line Debenham High Street this November.

On Thursday, November 9, Debenham High Street will gain a new addition with the opening of the already well-established artisan butchers Palfrey & Hall.

Palfrey & Hall provides a high quality cutting, smoking and curing service to the meat loving local community, with owners Shaun Palfrey and Deaglan Hall together having 25 years of local butchery experience. As a result, it’s safe to say the pair, who first went into partnership in 2013 and are both very proud of their craft, know their meat.

“We wanted to open a shop so that more, local, people could enjoy our products,” says Deaglan. “We were mainly wholesale until now, but we will be turning four years old this month and it seemed like the ideal time to open.”

“There has been a lot of work put into the new shop to ensure it was suitable for a food business. It was a long process, but we’ve redecorated the whole building and added in walk-in fridges for the stock. Hopefully people will enjoy it.”

Another exciting feature in the shop will be its milk vending machine, which the pair hopes to launch by the New Year.

The vending machine has been made possible by the many generous donations to Palfrey & Hall through its recently run Kickstarter campaign, and will be dispensing fresh Guernsey milk - from Suffolk Farmhouse Cheeses, a farm in which the butchers already works closely with - straight into its customers’ own bottles.

“It’s important to know where your produce has come from, therefore we are trying to support as many small local producers as we can,” adds Deaglan. “Staying local is a great way of getting traceable natural products from the farm onto the high street and into kitchens too.”

When curing and smoking its meat, Palfrey & Hall mixes traditional techniques and quality ingredients, which has resulted in the creation of its award-winning flavour.

The butchers’ Suffolk black bacon is cured using Sir Roger Porter’s ale from the renowned local brewery in Earl Soham. The ale is mixed with molasses and black treacle and results in a distinctively dark, rich, sweet taste.

Palfrey & Hall’s dry cured smoked back and streaky bacon has also been recognised by industry experts for its fine flavour. Praised by judges for its glistening appearance, succulent flavour, firm texture and excellent rasher size, Palfrey & Hall’s bacon was awarded two gold stars in the Great Taste Awards 2014.

During the Great Taste Awards 2015, the butchers’ Wiltshire smoked cured ham also earned the company another two stars.
