Suffolk-born Mr Kett started his career at the Swan Hotel in Southwold before joining the Michelin-starred Castle Hotel in Taunton.
“With the arrival of our new head chef Justin we wanted to build on our dedication to quality but create something of a new vibe for the restaurant,” said Tim Rowan-Robinson, managing director of the Thorpeness and Aldeburgh Hotel Group, which owns the Brudenell.
