A mum says she has achieved her dream as she prepares to open her own restaurant on the Suffolk coast.

Emma Barber said she "can't believe" she is about to launch Loaded Southwold after running her own catering company for the last 16 years. 

Loaded Southwold, in Victoria Street near the town centre, is set to be open before the school Christmas holiday and will be serving a range of foods and drinks. 

On the menu will be homemade loaded fries, waffles, brisket, blue cheese, barbecue pulled pork and chilli cheese fries.

Mrs Barber said: "I am really excited because I grew up in and around Southwold my whole life and I have been running a small catering business for the last 16 years called Miss Munchies.

"But it has always been my dream to have a little place of my own in Southwold and I can't really believe it is finally happening. 

"It's really refreshing and exciting to be a part of the Southwold community again rather than being on the outskirts."

Mrs Barber said she was amazed to see so much positive reaction from locals about her opening Loaded in the town.

"It's amazing and they are a good bunch," she added. 

"I know a lot of people in the community and to have a lot of support, not just from my family and friends, but from the wider community does build your confidence and make you think this could really take off."

East Anglian Daily Times:

"The interior is going to be really colourful, lots of neon lights and a bit of music playing, something a bit more relaxed to what Southwold is used to at the moment. 

"We are going to be giving a 10% Loaded loyalty card for local people for food, and rather than just handing it out willy-nilly we are going to give them out to the people who visit us frequently."
